Gumbo Soufflé

Gumbo is a Cajun delicacy, I think making an egg soufflé with a gumbo roux and spices with vegetables and (vegan) meat would be some good eats. Basically take a gumbo roux with your regular gumbo ingredients and bake it in some eggs and let the soufflé rise. Adding the holy trinity (okra, celery & green bell peppers) with some (vegan) chicken, shrimp, crab or even steak and adding some cheese would hit the spot.
